I first bought one of Nordic Ware Natural Aluminum Commercial Baker’s Half Sheet sometime a couple years ago and loved it. Then I made the mistake — long story short — of having a recipe go wrong that left the pan covered in sticky material and not cleaning the pan as soon as I should, so it was ruined. Completely my fault. So I bought a two-pack as a replacement (it was barely more expensive than the one, and I figured at some point I might need two at once). This time, I’m determined to take better care of it, and so far it’s still pristine.
Cooking is so much easier using these pans compared to the cheapo ones I used to use. I’m no professional, so I can’t make a claim as to whether the heat distribution is the best ever, but it’s certainly better than the $10 ones I had before, and this was barely more expensive! For example, when baking cookies, they’re always all done at the same time. Before, I would sometimes have half a sheet browning while the other half was still partially raw.
I’ve heard a lot of people say Nordic Ware’s pan is the gold standard, which is why I originally bought it before my … erm … cooking incident, and the company hasn’t let me down. I’m very careful to always use parchment paper or foil, and if I notice anything has seeped through, I immediately clean and dry it. Again, I’m not a professional, but it certainly works well for a novice baker/cook who regularly uses it for chicken, one-pan meals, cookies, etc.
